Autumn Salad Recipe

I love a good salad, and I love to eat with the seasons. That means I always try to include seasonal foods in my salads. Therefore, a salad I make in the Spring looks very different than a salad I make in the Fall.


If you aren't a big fan of salad, you might be making them wrong. A satisfying salad needs a variety of flavors and textures. Start with Autumn salad greens and then add all the seasonal yummy goodness you can.

Autumn Salad Greens

We are talking about a green salad here. Therefore, the base of the salad should be greens that you like. You can simply use lettuce, or get creative with a variety of greens. I suggest a combination of any of these:

  • Leaf Lettuce

  • Spinach

  • Arugula

  • Kale

  • Swiss Chard

  • Cabbage

  • Endive

  • Radicchio

  • Shredded Brussels Sprouts


Veggies

Make this Autumn Salad hardy and healthy with an assortment of vegetables. I prefer to choose veggies that are currently in season. As I write this, it's Autumn, so I'm adding things like:

  • Apples

  • Carrots

  • Broccoli

  • Roasted Winter Squash

  • Beets

  • Roasted Brussels Sprouts

  • Onion

  • Tomatoes

  • Cauliflower

  • Baked Sweet Potato

  • Roasted Red Peppers

  • Pickled anything (cauliflower, onions, cucumbers, beans, asparagus, jalapenos, etc)


Some of these ingredients are nice raw, some are better if you roast them up ahead of time. You can always steam vegetables, but most of them taste better roasted. Pick a few and make them taste great!!!

Autumn Salad Dressing

I previously released a blog and YouTube video about my Salad Dressing Formula. You can check that out to learn how to make an easy and delicious dressing. This is what I did in the video above.


Balsamic Vinegar + Olive Oil + Maple Syrup + Dijon Mustard + Chili Powder + Salt/Pepper


Toppings

The easiest thing you can do to take a good salad and make it delicious is to add some yummy, crunchy bites. Yes, croutons fall into this category, but you can do better than croutons.

  • Nuts (walnuts, pecans)

  • Sunflower Seeds

  • Pepitas (hulled pumpkin seeds)

  • Roasted Pumpkin Seeds

  • Dried Fruit

  • Roasted Chickpeas

  • Slivered Almonds

  • Shaved Parmesan


Protein

If you are eating this salad as a meal and want to add protein, go ahead. Top with sliced chicken or steak (a great way to use leftovers) or add a hard-boiled egg, some tofu, and a big scoop of black beans.
