Making Mayonnaise with Avocado Oil

We don't use a lot of mayonnaise in our house. Even though mayo has a long expiration date, I often toss half-used jars once they expire because we don't go through it fast enough. This made me think, 'why does a jar of mayo last so long and why do most use cheap yucky oils?' The ingredient list isn't long so that also makes me think, 'why don't I make my own when I need it instead of buying and tossing jars of it?'

My Favorite Use for Mayo

This time of year (late Summer/early Fall), one of my favorite meals is a simple tomato sandwich made with fresh, in-season tomatoes from the garden. And, you can't make a good tomato sandwich without mayo.

The Mayo Recipe

I found a recipe HERE. I followed it almost exactly. However, next time I make it I will make alterations. This will be my next batch:

Ingredients

1 egg

1 cup avocado or olive oil

2 tsp apple cider vinegar

1 small garlic clove, minced

1/2 tsp dijon mustard

1/2 tsp salt


Directions

  1. In a wide-mouth jar (if your immersion blender fits into it) or a measuring cup, add all ingredients.

  2. Using an immersion blender, start at the bottom and begin blending. As the ingredients blend together, they will turn white and opaque. Slowly lift the blender up as the mayo begins to form. You can then move it around a bit to be sure all the ingredients are incorporated.

  3. If you were able to use a wide-mouth jar, simple add a lid and refrigerate. If you used another container, transfer it to a sealable container.


Homemade mayonnaise can be stored in the refrigerator for about 1 week.


The Best Tomato Sandwich

In my mind, this is what makes the best tomato sandwich:

The Bread - use homemade bread if possible. If that isn't an option, use whole-grain hearty whole-grain bread.

Toast - whatever bread you use, toast it. I have made sandwiches on cheap white bread, wheat bread, bagels, and english muffins. Whichever bread you use (and whatever type of sandwich you are making), the sandwich will be SO much better if you toast the bread first.

Tomatoes - Use in-season tomatoes. If you buy tomatoes from the grocery store in February, they will be good, but not great. The best tomato sandwiches are made during tomato season.


I Also Made Caprese Salad

Since it was tomato season, I made a caprese salad to go with my sandwich. The ingredients are simple - sliced tomatoes, sliced fresh mozzarella, and chopped basil. You can stop there or add an extra bit of flavor with the following options:

  • a sprinkle of salt

  • a drizzle of balsamic vinegar

  • a drizzle of garlic infused olive oil

  • a drizzle of balsamic reduction

  • additional fresh herbs like parsley, thyme or marjoram
