Welcome to my blog! Today I am making Strawberry Oat Muffins. I was in the mood for something sweet, healthy, and in season (yea Spring)! Then, while I was checking my email I saw that one of my favorite food blogs (Cookie & Kate) had sent out a healthy recipe for Strawberry Oat Muffins. Perfect!

I read over the recipe and found that I had all the ingredients except strawberries and Greek yogurt. I made a quick trip to the grocery store and viola, I'm ready to bake.

How Did They Come Out?
They were healthy and delicious. If I were going to make them again, I might add a little cinnamon to the batter and maybe a couple of TBSP of the turbinado sugar directly into the batter. Don't get me wrong, they were delicious, but I think I may have enjoyed them even more if they were a little bit sweeter.
However, the sweetness level also depends on the berries! We are not quite into strawberry season here. So while the strawberries I purchased were red and tasty, they probably weren't quite as sweet as the fresh local berries we will have in a month.
Variations
I think a little cinnamon (1-2 tsp) would be a great addition.
You could easily substitute some of the strawberries with rhubarb.
I would love a blueberry version.
If you like sweeter muffins, I would suggest adding a couple of tablespoons of turbinado sugar directly to the batter.
Substitute GF flour for a gluten-free version.
Use an egg substitute for a vegan version.
