Did you know that February is National Grapefruit Month? We love grapefruit in our house. In fact, given the choice, I think my husband and I would both choose grapefruit juice over orange juice at any time. Not only is grapefruit super refreshing and high in vitamin C and Potassium, but the sour and bitter flavors support healthy digestion by stimulating bile flow and increasing saliva production.

But grapefruit isn't for everyone. Did you know that several prescription and over-the-counter medications can be affected by grapefruit? That's right, grapefruit can affect how your body metabolizes some medications. If you routinely take prescription medications or over-the-counter medications, check with your doctor or pharmacist to be sure it's safe for you to consume grapefruit,
To celebrate National Grapefruit Month, I'm sharing this super simple grapefruit salad, perfect for including with any meal or enjoying as a snack.

The Recipe
Ingredients
2-4 whole grapefruit, depending on how much salad you want
1 scant teaspoon of honey per grapefruit (use more if you want it sweeter)
1 wedge of lime
1-2 fresh spearmint leaves (more for stronger mint flavor)
Instructions
With a knife, cut the peel and outer membrane from the grapefruit. Working around each grapefruit, slice between the membrane to segment the fruit into supremes. Save the juice as you work.
Add honey to about 1/4 - 1/2 cup of the juice. Toss the juice mixture with the grapefruit supreme.
Squeeze the lime wedge over top, then finely chop the mint leaves and sprinkle over the grapefruit. Stir together and let the flavors meld together for 30 minutes before serving.
